Erin Barry, Pastry Chef

 

Erin Barry seriously sweetened the pot when she joined team Ledger as our Executive Pastry Chef. A current Salem resident, Erin spent most of her adolescent years growing up in Southern MA and Rhode Island and enjoying classic coastal New England food. Erin can easily pinpoint her love for sweets back to her childhood; while driving home from visiting her Grandmother, Erin and her family made their routine stop at Del's Lemonade. And of course you know what they say: when life gives you lemons... become a pastry chef.

Erin graduated from Johnson and Wales focusing on both baking and pastry art as well as food service management. She started working in Boston kitchens after graduation and quickly made a name for herself and found herself working in some of the best pastry programs in the city. Eventually, she landed a coveted position under Joanne Change at the ever-popular Flour Bakery and ran the pastry department for the Washington St. location. After her successful run at Flour, she was offered another great position, this time closer to home, at Frank in Beverly. At Frank she managed the pastry and bakery department, keeping herself busy with rotating donuts, cakes, croissants, biscuits and everything in between!

When Erin joined Ledger, she quickly revamped the pastry program and used her experience and creativity to add more eclectic takes on a classic. For example, her deconstructed strawberry shortcake with pound cake, black sesame, strawberries, chantilly, and basil is not only instagram-worthy, but has the nostalgia of a classic dessert with a modern twist.

While not at Ledger, Erin can be found listening to local bands and live music. She is also a huge wrestling fan and is no stranger to a good puzzle. When it comes to baking she is always down for a challenge, but will forever return to a classic chocolate chip cookie, which is still her favorite thing to bake.
